Method
- In a bowl, combine the sweet soy sauce, minced garlic, chopped shallots, grated ginger, vegetable oil, brown sugar, lime juice, salt, and pepper. Mix well to form a marinade.
- Place the chicken pieces in a large Ziploc bag or a bowl, and pour the marinade over them. Make sure the chicken is well-coated. You can let it marinate in the refrigerator for at least 1 hour, or longer for more flavor.
- Heat a large skillet or pan over medium-high heat. Add the marinated chicken pieces (reserving the marinade) and cook until browned on all sides, about 5-7 minutes.
- Pour the reserved marinade into the pan with the chicken. Reduce the heat to medium-low and let it simmer for about 15-20 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
- Once the chicken is fully cooked, remove it from the heat. Serve the Ayam kecap hot with steamed rice or noodles.
- For a finishing touch, sprinkle some chopped green onions and sesame seeds on top for garnish, if desired.
