Ayam kecap is a popular Indonesian dish that features chicken cooked in a flavorful soy sauce-based marinade. “Ayam” means chicken, and “kecap” refers to the sweet soy sauce used in the dish. Ingredients
  

  • 2 pounds chicken (cut into pieces)
  • 1/2 cup sweet soy sauce (kecap manis)
  • 3 cloves garlic (minced)
  • 2 shallots (finely chopped)
  • 1 thumb-sized ginger (grated)
  • 1 tablespoon vegetable oil
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • green onions chopped, for garnish (optional)
  • sesame seeds for garnish (optional)

Method
 

  1. In a bowl, combine the sweet soy sauce, minced garlic, chopped shallots, grated ginger, vegetable oil, brown sugar, lime juice, salt, and pepper. Mix well to form a marinade.
  2. Place the chicken pieces in a large Ziploc bag or a bowl, and pour the marinade over them. Make sure the chicken is well-coated. You can let it marinate in the refrigerator for at least 1 hour, or longer for more flavor.
  3. Heat a large skillet or pan over medium-high heat. Add the marinated chicken pieces (reserving the marinade) and cook until browned on all sides, about 5-7 minutes.
  4. Pour the reserved marinade into the pan with the chicken. Reduce the heat to medium-low and let it simmer for about 15-20 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
  5. Once the chicken is fully cooked, remove it from the heat. Serve the Ayam kecap hot with steamed rice or noodles.
  6. For a finishing touch, sprinkle some chopped green onions and sesame seeds on top for garnish, if desired.
