Clean kidney. Remove inner fat from middle of kidney and slice into pieces. Add 1 tp of all purpose meat seasoning, thyme, scallion, black pepper, garlic, pimento and onion. Add 1 tsp of Grace browning-apply slowly and mix content until desired dark color is obtained. Leave to marinate for at least an hour.
Add 2 tbsps. oil to a frying pot and when oil is medium hot pour in marinated kidney. Stir fry add 1/2 cup hot water, ginger, scotch bonnet pepper and ketchup. Simmer for 20 minutes or until kidney is cooked.
Serve with bread, fried dumplings or boil green bananas.
