- 1 tablespoon ketchup

Instructions
Prepare meat:
- Clean kidney. Remove inner fat from middle of kidney and slice into pieces.
- Add all purpose meat seasoning, thyme, scallion, black pepper, garlic, pimento and onion. Slowly stir in Grace browning until desired dark color is obtained.
- Leave to marinate for at least an hour.
Cook:
- In a small pot or kettle boil 2 cups water and set aside.
- Add oil to a frying pot and when oil is medium hot pour in marinated kidneys. Stir fry for 2 minutes to brown.
- Add ginger, Scotch bonnet pepper and ketchup. Simmer for 20 minutes or until kidney is cooked. Add hot water as necessary until kidneys are cooked or to make extra gravy.
- Serve with bread, fried dumplings or boil green bananas.
