Instructions
 

Prepare meat:

  • Clean kidney. Remove inner fat from middle of kidney and slice into pieces.
  • Add all purpose meat seasoning, thyme, scallion, black pepper, garlic, pimento and onion. Slowly stir in Grace browning until desired dark color is obtained.
  • Leave to marinate for at least an hour.

Cook:

  • In a small pot or kettle boil 2 cups water and set aside.
  • Add oil to a frying pot and when oil is medium hot pour in marinated kidneys. Stir fry for 2 minutes to brown.
  • Add ginger, Scotch bonnet pepper and ketchup. Simmer for 20 minutes or until kidney is cooked. Add hot water as necessary until kidneys are cooked or to make extra gravy.
  • Serve with bread, fried dumplings or boil green bananas.
