- 1 onion chopped
- 2 cloves garlic minced
- 2 cups sweet potatoes peeled and chopped
- 3 cups chicken broth

- 1 tomato chopped
- 1 package frozen mixed vegetables ~10 ozs

Instructions
- In a saucepan, warm oil over medium heat. Add onion, garlic, and sweet potatoes and saute usually for 5 minutes.
