Peel plantain by cutting off both tips then slice along its length to a depth of about 4 inches, then shell out plantain.
After removing skin cut plantain across in halves then slice each half into about 3 rectangular blocks. Please take care not to cut yourself as plantain can be slippery.
In a frying pan add 1/2 cup of vegetable oil and heat until medium hot. Add slices of plantain and fry each side for about 4 minutes or until it changes to a golden brown color. Be careful when added plantain to hot oil.
Serve as a side order at breakfast.
