  • 1 pound pork ribs, chunks

Instructions
 

  • Pork meat should be well thawed. Rub in jerk seasoning (mild, hot or very hot) into meat refrigerate and marinate for 10 hours. The longer the marinate the better the taste.
  • Meat can be cooked in an oven or grill. Better result is on a grill in which pimento wood or pimento (allspice) could be added to fire to get a flavoury smoke taste to the jerk.
    If done in an oven bake for 1 1/2 hrs. or until meat is cooked then switch to broil for 3 minutes to get the desired color on either side.
  • Serve with rice or bread
