Mackerel in Tomato Sauce
Ingredients
- 1 medium onion chopped
- 1 pinch ground black pepper
- 2 cloves garlic crushed
- 1 sprig thyme
- 1 stalk scallion chopped
- 1 cans Macherel in tomato 15 oz, (TM) Grace Mackerel used in this recipe
- 2 tablespoons vegetable oil
- 1 pud Scotch bonnet pepper 2 small slices
- 1 sprinkle ground ginger

Instructions
- To a skillet add vegetable oil and saute onion, garlic and scallion until tender.
- Add tin of mackerel in tomato. Sprinkle with black pepper and ginger. Add few slices of scotch bonnet pepper and simmer for 5 minutes.
- Serve with bread or boil dumplings and bananas. Garnish with celery.
