Ingredients
- 1 medium size onion chopped
- 1 springle ground black pepper
- 2 cloves garlic crushed
- 1 sprig thyme
- 1 stalk scallion chopped
- 1 tin Macherel in tomato (TM) Grace Mackerel used in this recipe
- 2 tbsps vegetable or olive oil
- 1 whole scotch bonnet pepper 2 small slices
- 1 sprinkle ground ginger

Instructions
- Prepare seasoning on the side. To a frying pan add 2 tbsps vegetable oil and sauté onion, garlic and scallion.
- Add tin of mackerel in tomato to pan then add sprinkle of black pepper and ginger. Add few slices of scotch bonnet pepper and simmer for 5 minutes.
- Serve with bread or boil dumplings and bananas
Recipe Notes
If less spice needed can use instead whole scotch bonnet pepper instead of slices. Garnish with celery and whole long peppers
