Defat and wash stock of oxtail. Seasoning with regular meat seasoning or make own. Add tablespoon of browning, 1/4 tsp of crushed pimento and mix thoroughly. Allow to marinade for 30 mins.
Add tablespoonful of oil to pressure cooker and heat until hot. Add oxtail and stir and brown oxtail. The aim is to get the oxtail to have a brown color. Poor off excess oil if necessary and add water to cooker then pressure for about 20 minutes.
Once meat is pressured to tenderness skim oil from top of gravy. Add water to pot and extra browning if needed. Spinners (small dumplings) are then added. Cook for 10 minutes then add chopped onions, garlic, thyme, whole pepper, all spice, tablespoonful of brown sugar. Also add tin of butter beans and cook for another 10-15 minutes. You could also use a ready made oxtail seasoning instead of making own as above.
