While semi-frozen cut liver into cubes with less than 1/2 inch thickness and wash. Add seasoning salt, black pepper, garlic, thyme, bell pepper and onion. Add in small portion 1 tsp Grace browning. Need not use all the browning if desired color is obtained with a few drops of the browning.
Add 2 cups water to a pot and boil. You will use hot water to add to liver to make gravy. Hot water helps to make liver tender.
To a frying pot add 1 tbsp vegetable oil and when hot pour in liver mixture and stir fry. When liver changes color add boiling water and cook liver until tender. Next add scallion, scotch bonnet pepper and a sprinkle of ginger. Simmer for another 5 minutes.
Serve with potatoes, rice, bread or boiled dumplings and bananas.
Add browning in small portions until desired color is achieved and remember to use hot water to add to liver and not tap or cold water to make liver tender.
